Grandma's handwritten recipe card calls for "a gill of cream," the 1920s cookbook asks you to preheat your oven to Gas Mark 5, and a colonial American jam recipe mentions "a peck of strawberries." If you've ever stared at instructions like these in bafflement, you're not alone. Old recipes and vintage guides are treasure chests of culinary heritage — but decoding their measurements requires a working knowledge of units that have largely vanished from modern kitchens. This guide demystifies the most common vintage measures and gives you the tools to cook confidently from any era's recipes.

Old Volume Units: From Gills to Firkins

Before the twentieth century standardized kitchen measures, English-speaking cooks on both sides of the Atlantic worked with a rich (and occasionally confusing) vocabulary of volume units rooted in trade, brewing, and pharmacy. Here are the most important ones you'll encounter:

The gill (also spelled "jill") is probably the most common vintage volume unit still lurking in old recipe books. In the United States, 1 gill equals ½ US cup, or 118 ml. In the United Kingdom, however, 1 gill equals 142 ml — the difference matters when you're dealing with liquids. The firkin was a unit for butter, lard, or beer. For butter, 1 firkin traditionally equalled 56 pounds (about 25 kg) in England — clearly a commercial rather than domestic measure, but you may encounter it in historical cookbooks describing ingredients for large estate kitchens.

Cup Sizes: The Transatlantic Confusion

The humble "cup" is one of the most deceptive units in recipe translation, because the standard cup size varies by country — and even by era within the same country.

The US cup is 240 ml. The UK/Australian "metric cup" (standardized in the 1970s) is 250 ml. The older British imperial cup was 284 ml (half an imperial pint). Canada once used the imperial cup before metrication. Always identify which cup standard a recipe uses before scaling.

The practical difference is small for a single cup of flour — about 10 ml — but it compounds over multiple cups. A recipe using 4 cups of liquid with the old British standard will use roughly 160 ml more than the same recipe measured in US cups. For delicate baking this can noticeably affect texture.

Tip: When using a pre-1970s British recipe, add roughly 18% to your US cup measurements to match the original imperial cup volume. For Australian recipes from the 1970s onward, the metric cup (250 ml) is only 4% larger than the US cup — negligible for most recipes.

Old Weight Terms: Grains, Drams, and Scruples

Apothecary and avoirdupois weight systems left their mark on old recipes, particularly for baking and confectionery where precision mattered. Understanding these terms helps you convert accurately:

The grain (gr) is the smallest traditional weight unit, equal to 64.8 mg. You'll see grains in old pharmacy-influenced recipes for spices, leavening agents, and remedies. "3 grains of salt of tartar" is about 0.19 grams — truly a pinch.

A scruple equals 20 grains, or approximately 1.3 grams. The scruple was an apothecary unit used by pharmacists and appeared in medical recipes and some confectionery guides when precise dosages of flavoring were required.

A dram (apothecary dram) equals 3 scruples, or about 3.9 grams. Note that the avoirdupois dram (used in everyday trade) equals only 1.77 grams — the system makes a difference. In old cookbooks the dram usually means the avoirdupois version unless the recipe is clearly pharmaceutical in origin.

An ounce should be straightforward, but again context matters: the troy ounce (used for precious metals and sometimes in old spice trades) is 31.1 grams, while the common avoirdupois ounce is 28.35 grams. Nearly all food recipes use the avoirdupois ounce.

Spoon Measurements: Dessertspoons and Coffeespoons

Modern recipes use teaspoons and tablespoons, but older guides frequently mention other spoon sizes that don't map directly onto today's standard measures:

The dessertspoon is a British unit equal to 2 teaspoons, or about 10 ml. It falls neatly between a teaspoon (5 ml) and a tablespoon (15 ml). Many British and Australian recipes from the mid-twentieth century use it as a standard measure, particularly for spices, extracts, and leavening. When you see "1 dessertspoon of baking powder," use 2 teaspoons.

The coffeespoon (or "coffee spoon") is approximately half a teaspoon, or 2.5 ml. It appears in some continental European recipes translated into English, and in older British household guides. "A coffeespoon of vanilla" means a scant half-teaspoon.

The wineglass was sometimes used as a liquid measure in informal recipes. A "wineglass" was roughly 120 ml (4 fl oz), though this varied considerably. Treat it as approximately half a US cup when no other context is available.

Vague Instructions: "A Knob of Butter" and Friends

Some of the most charming — and infuriating — instructions in old recipes are the qualitative ones that assume a cook's intuitive knowledge. Here's how to interpret the most common:

Scaling Recipes Up and Down
